Low Sodium Quesadillas

Making some wonderful Mexican simple dishes is totally possible without using too much salt. You should focus on using some fresh veggies and herbs, and avoid adding cheese, or look to add low sodium cheese instead or regular. Also, be careful when you season the meat and vegetables used.

Servings: 4

Preparation time: 30 minutes

Ingredients:

• ¼ pound chicken strips

• 1 sliced red bell pepper

• 1 sliced small sweet onion

• 1 Tbsp. olive oil

• 1 tbsp. chili powder

• ½ tsp. black pepper

• ½ cup shredded Monterey Jack cheese

• 4 medium size tortilla breads

• Sour cream and diced fresh tomatoes as condiments as you wish

Method:

Season the chicken strips with chili powder.

Heat oil in the large frying pan and start cooking the chicken strips.

Add the red bell pepper, onions and continue cooking for another 10-12 minutes.

Season the veggies with black pepper and chili powder.

When ready to assemble, lay a tortilla bread, add your desired condiments, including the cheese and a generous portion of chicken and veggies.

Heat a few more drops of oil and fold the tortilla bread in half to start grilling in the pan. Flip after 5 minutes or until you are satisfied.
